Never has this been more true! 2013 is proving to be a bumper year in terms of British fruit. After one of the wettest winters and coldest springs, our countryside is now enjoying one of its most abundant wild harvests in years!
This recipe is a great way of using up some of the extra blackberries you might have had the pleasure of picking this season and, if you get started now, it will be ready to drink in time for Christmas!
1. Put the blackberries in to a 1 litre sterilised bottle or jar
2. Add the sugar
3. Top up with the gin
4. Shake well
5. Store in a dark cupboard and leave for a maximum of three months, shaking the bottle every week or so
6. Test for sweetness, adding more sugar to taste if required
7. Strain, discarding the fruit…enjoy!
